Eco Bella Bakery was created out of a need for vegan baked goods that were not found at local restaurants. Everytime Jeaninne and Lyn would go out for dinner, Jeaninne would not be able to have any desserts. So it was decided that Jeaninne was going to make her own desserts. After much experimenting and food tasting by Lyn, Eco Bella was born on October 23rd 2007. Soon the question was where do we sell these products? We started out selling at the Rochester Public Market during the winter of 2007, finding some customers here and there but we were encouraged to try the market during the warmer months as well.
During the spring/summer of 2008, we were doing 3 markets a week(
Monroe Village Farmers Market, Southwedge Farmers Market,, and the
Rochester Public Market) when we were starting to get approached from customers looking for gluten-free products. After several of these inquiries, we thought is this a demand that is not being fulfilled in our area. Our research said yes, so we decided to also work on gluten-free/vegan products as well.
After several months of research and trial and error, Eco Bella had developed a line of gluten-free products that our customers loved. With the inception of the GF line of products, Eco Bella's sales grew and soon we outgrew working out of the house. The search was on for finding a retail kitchen that we could work out of.
Since we were familiar with the South Wedge neighborhood from the farmer's market we started looking there. Soon we found the building that we are in now, 732 South Ave. It was never set up for a baking environment, it took Lyn and Jeaninne almost a month to remodel the building to suit our needs.
On January 31st 2009, Eco Bella Bakery opened its doors for business as both a vegan bakery and a gluten-free/vegan bakery. We had dedicated pans/utensils/etc. for wheat products and another entire set for gluten-free products. Two different display cases for each type of baked good. This proved to be very difficult for us to offer both types of baked goods in such a small shop.
We decided in June 2009 that Eco Bella would become an entirely gluten-free and vegan bakery. By dropping the wheat flour,t his allowed us to concentrate on the customers needs and bake a quality product for them.
Thanksgiving Week 2009 was Eco Bella's busiest week ever in the shop and we thank all of our customers who ordered GF/V products for their holiday needs.
